Use a foundation or build everything yourself.

1. Set your yield

Choose what is fixed. The handling reserve is added on top of your usable dough.

2. Build your flour blend

All flours together must equal 100%. You can choose which flour goes into your starter or preferment later.

3. Tune the dough

Hydration and every percentage are calculated from total flour.

A small reserve covers dough left on the bowl, hands and tools. It is not a prediction of baking loss.

4. Choose the fermentation base

With starter, poolish and biga, flour and water inside the preferment are included in the total formula.

This percentage shows how much of the total flour is already inside your active starter.

5. Add your own ingredients

Oil, sugar, malt, seeds or anything else: every percentage remains tied to total flour.
